Ingredients
- 1/2 cup cooked medium grain rice
- 2 tablespoons coconut milk
- 4 sheets Vietnamese rice paper
- 1 kiwi fruit peeled and sliced
- 1 yellow peach or nectarine pitted and sliced

Instructions
- In a bowl, combine warm, cooked rice with coconut milk. Set aside.
- Wet one piece of rice paper.
- Place kiwi slices and nectarine slices on rice paper. Top with 2 tablespoons rice. Fold sides in and roll up to wrap.
