Ingredients
Instructions
  1. Combine dry rub ingredients in a bowl. Coat fish with dry rub evenly on both sides. Set aside for 30 minutes.
  2. Heat oil in a large non-stick skillet over medium-high heat until hot. Add fish; pan fry until golden brown on both sides. Remove fish from pan; keep warm.
  3. Add yellow and red onions and green onions to skillet over medium heat (add extra oil if needed) ; stir-fry until soft, about 3 minutes. Season with salt and pepper.
  4. Place onion mixture on a serving platter, place fish fillets on top and sprinkle with fish sauce, rice wine, dill and roasted nuts.

Ginger Carrot Soup with Curry Coconut Cream

Instructions
  1. Melt butter in a wok or stir-fry pan over medium-high heat. Add ginger, onion and carrots; cook for 3 – 4 minutes.
  2. Add sesame oil, garlic salt, curry powder, turmeric, lemon zest and stock. Reduce heat, continue to cook until carrots are soft, about 20 minutes.
  3. Puree carrot mixture in a blender until smooth. Add coconut milk and more stock, if needed. Warm over medium heat.
  4. Garnish with green onion, cilantro and toasted sesame seeds.

Savory Baked Pumpkin with Chicken & Mushrooms

  1. Preheat oven to 375 degrees F. Cut off top of pumpkin, scoop out seeds and a portion of pumpkin flesh (to make room for filling). Set aside pumpkin top.
  2. Rub inside of pumpkin with wine and Chinese five-spice powder. Place pumpkin on a parchment-lined baking sheet. Bake in pre-heated oven until pumpkin is almost cooked, 30 – 40 minutes.
  3. While pumpkin is baking, combine sauce ingredients in a small bowl; set aside.
  4. Remove pumpkin from oven. Reduce heat to 350 degrees F.
  5. Heat a wok or stir-fry pan over medium-high heat until hot. Add oil, swirling to coat sides. Add chicken; stir fry for 1 minute. Add onion and mushrooms; stir-fry for 2 minutes. Stir in sauce; mix well. Add cornstarch solution; cook, stirring, until slightly thickened.
  6. Spoon stir-fry mixture into pumpkin. Add the top, return pumpkin to 350 degree F. oven. Bake until pumpkin is tender, about 25 minutes.
